The unofficial capital of Oz’s food and beverage scene is getting two major luxury hotel openings in 2022 when the Ritz-Carlton and the Shangri-La start calling the city home. Use Melbourne as your base for a road trip into the arid outback just beyond (a stop at Brae is a must for any foodie), then head to the Mornington Peninsula—think: Martha’s Vineyard meets Bordeaux.
